A Romantic Dinner for Two

Date night just got a lot easier — and less expensive.

It’s love at first bite with this romantic Valentine’s Day Dinner of elegant salmon fillets, flavorful asparagus and homemade dill sauce. Pair this meal with a dry glass of wine and you will have your sweetheart swooning in no time. Oh and did I mention this is all keto?!!

So let’s get going! I am going to walk you through step by step on how to pull off a romantic dinner for two!


Step 1: Get cooking!!

My Lemon Salmon & Asparagus from my new book comes together in 20 minutes and couldn’t be easier! It is also a one pan meal that you can put in the oven and then focus on your other steps while it is roasting!

Ingredients:

  • 1/4 cup avocado oil, divided

  • 4 garlic cloves, minced

  • 2 (6-ounce) salmon fillets (I use wild-caught salmon from Sizzlefish. They deliver straight to your door and are the best quality!! Use promo code: CLEANKETO for 10% off your order!)

  • Juice of 1 lemon

  • 12 asparagus spears, woody ends removed

directions:

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.

  • Combine 1 tablespoon of avocado oil and the garlic in a bowl.

  • Place the salmon on the prepared baking sheet.

  • Rub the salmon with the garlic and oil mixture and evenly coat.

  • Squeeze the lemon juice over the salmon and season with salt and freshly ground black pepper.

  • Arrange the asparagus around the salmon in a single layer, drizzle the spears with the remaining 1 tablespoon of avocado oil, and place the lemon slices over them.

  • Roast for 12 to 15 minutes until the salmon is cooked through to your liking.

STEP 2: Make your dill sauce

Ingredients:

  • 1/4 cup mayo (Primal Kitchen Avocado Oil may is my ultimate favorite - use promo code CKL for 10% off)

  • 1/2 tsp lemon juice, or to taste

  • 1 tsp finely diced onion

  • 1/2 tsp dill weed

directions:

  • Finely dice the onion and chop the dill weed.

  • Add the mayo into a small bowl.

  • Add the lemon juice. Start with 1/2 tsp, then add more if desired.

  • Mix in the onion and dill weed.

  • Stir until full combined.

STEP 3: set the table

A beautifully set table will not only create an amazing ambiance, but it can also take a meal to the next level. I like to keep it simple with classic dishware and beautifully plated food. For this dinner, I really wanted a fresh and clean look so I went with all white dishes to contrast perfectly against the pinks, greens, and yellows in the ingredients and chose a nautical looking tablecloth to act as the perfect backdrop. Next, I used extra lemons slices and dill to create a functional (and edible) centerpiece. Finally, I made a added a few personal touches to tie everything together.

Final Touches

For the final touches I went with two romantic staples: flowers and candles! I attached these cute mini chalkboards to simple white roses and wrote a personalized message for my date. STEP 4: pour a glass of wine and enjoy the night!

A glass of good quality dry wine is 100% acceptable on the keto diet every once in a while. Opt for dry wines like Cabernet Sauvignon, Merlot, Pinot Noir, Champagne, Chardonnay, Pinot Grigio, and Sauvignon Blanc. A 5 ounce glass only has 3-5 grams of carbs.
